OP here. I made this recipe, which replaced half the butter with with canola oil, and they are delicious. The recipe says extra light olive oil would work too, but EVOO is probably not a good idea. I used canola, because I already had it. I think it's a great way of making the cookies somewhat healthier -- the saturated fat is cut in half, and they're just as good. I'm going to keep trying recipes and will report back.

I love olive oil and that sounds disgusting.

Olive oil has a distinct taste, even in small quantities.

Sugar cookies have a distinct and subtle taste. Olive oil would destroy that flavor.

Sugar cookies should only be made with real butter. Not oil, not margarine or fake butter, and certainly not olive oil.
