OP here - Ooh, ds might like souffle or salad.
We usually glaze with honey or roast. I also do love making halwa on occasion, but that's dessert. I'll try the souffle first, and if he likes that can probably change up the veggies for some variety.

I love this kind of carrot salad. Except, you add a lot of garlic, some spices , vinegar and heated olive oil. Mix it and it is so good. You can google it as a Korean carrot salad for exact recepie.

Cut into discs. Put in large pan, cover carrots with water and add a little olive oil and a bit of garlic, simmer with lid on until carrots are tender. Drain and add salt, and mint if you like. DD LOVES them like this.

I love them roasted with other vegetables. They are great around a pork tenderloin or with a roast. You can get close to that flavor if you cook them in a nice broth.
