Make jasmine rice with a mix of water and coconut milk, once done stir in some of the shredded coconut along with some craisins and almonds.

Put in food processor with a few chopped dates, almonds, tiny pinch of salt, a few drops of vanilla extract. This makes a wonderful topping for oatmeal or added to plain yogurt. I use this to make my own energy bars by adding a few drops of water to make it stick, then pressing it into a brownie-bite silicone pan (you could just press it into any old dish and cut squares.) Refrigerate leftovers for up to 1 week. Sometimes I mix in carob chips.
