Imake a good weight watchers version that has only two eggs, 2% milk cheese, and part skim ricotta. It's really good! Sometimes I add diced Canadian bacon.

PP here, if you have very wet vegetables (like spinach) then add a TB of flour to your egg mixture.

Quiche is so easy and so forgiving. I make it all the time but never measure. I just beat 5-6 eggs, add a dash of milk (about as much as I would add for scrambled eggs), and some salt and pepper. Mix in a big handful of shredded cheese. Put your cooked veggies in a pie crust (I use frozen). Just cook the veg to al dente-- they will cook more in the quiche. Pour the egg mixture over the veg. Sprinkle some shredded parmesan cheese on the top, and it will brown up nicely. Bake at 350 for about 40 minutes. Comes out great every time. This is a great way to use up extra veggies!

One of my favorites, I also use a recipe from epicurious, one that calls for a ton of garlic and a fairly easy butter-crust.

Sounds good to me. I'd just be sure to not leave the broccoli in really large pieces so that it's easier to eat.

I make my quiche base with 3 eggs, 1 1/2 cups milk & then whatever veggies and cheese I have on hand (swiss cheese, mushroom & spinach is a big hit at our house) the secret to keeping your cheese from getting greasy is tossing it with 1tsp of flour before mixing it with the eggs & milk.

Broccoli cheddar quiche is great. Just find a recipe online and go for it.
