Definitely possible. You can make a variety of types of flat breads in a pan. It'll crisp up well, but the cheese may not brown the way you would like it to. Put the lid on for a minute at the end if the cheese isn't melting.

Do you have a grill? (I know, it's cold out, but you can definitely grill a pizza.)
