This is a long shot, but if you're ever in St Paul, go to the Finnish Bakery in St. Anthony Park. They have the best little raspberry sandwich cookies....

if anyone wants the recipe, here it is:

cream 2 cups butter and 1 cup powdered sugar
add 2 tsps vanilla
stir in 3 cups of flour and 1 cup ground walnuts

Form small balls, and flatten on cooking sheet. Bake at 350 for about 15 minutes.

After they're cool, sandwich raspberry jam, then dip 1/2 cookie in choc chip/crisco mix. (1 cup choc chips to 2 tsp crisco.)

So fattening, but so good!

They are Linzer tarts, without the chocolate and I only use rasberry filling, though I could see currant jam working well, too. Google it, Lots of recipes,

I'm not sure what these are called either OP, but they sure are delicious. I think I found something similar but it doesn't have the ground walnuts.

I think it's a shortbread, but I'm not sure. Ingredients are:

butter
vanilla
powdered sugar
ground walnuts
flour

after baking you make a raspberry jam "sandwich", then dip 1/2 of the cookie in melted chocolate.


This cookie is the best cookie I have ever tasted, but I have no idea what it's called. I got the recipe from an ex-coworker, and she didn't even know. I want to take some to a swap, but I have no idea what to name it.

Next question, do you think this type of cookie would freeze well? Not sure whether
1) to just freeze the individual cookies, making the sandwich and chocolate dips later when I thaw
2) to go ahead and add the jam and freeze, but do the chocolate later when I thaw
3) just do everything now.

Don't know if jam and chocolate freeze well, but this would be preferred if so, to save time later.

what do you think?
