Use spaghetti squash! It's so easy and makes a great pasta-like replacement! You just need to add a bit of additional salt (and other seasonings), in my opinion. My family LOVES it!

Complex carbs are important for growing children, so you should not eliminate them from meals. However, you can reduce the carbs you currently serve and up the protein and veggie portions. Do not be afraid to use fat and salt to make the vegs taste better. Also, try using quinoa or lentils instead of rice.

Reduce the pasta, use whole wheat pasta (we like Bionaturae linguine), and increase the amount of vegs and protein. We also eat a lot of fruit for dessert, especially if the kids didn't particularly like their vegs at dinner.

We hardly ever eat bread at dinner.

We rarely have carbs with dinner. Most nights it is a grilled protein plus a roasted veggie or two, maybe a salad as well.

But if you are accustomed to serving a sauce over rice, pasta or potatoes, you'll need to rethink that a bit. Some substitutions: sauteed or creamed spinach, spaghetti squash, cauliflower mashed or riced, pureed butternut squash.

We rarely do carbs with dinner. We have a lot of mashed cauliflower, roasted cauliflower/brussel sprouts

We had roasted salmon and steamed broccoli yesterday and that was plenty (just more broccoli to compensate for lack of carb). You could try doing a fresh veg and a cooked veg side so a salad and blanched green beans wih some almonds and olive oil so you still have 3 things on a plate. I also like the Smitten Kitchen zucchini sauté and all of the veggie fritters.

Make stir fry with lots of vegetables (book choi, snow peas, red peppers, green beans and tofu). No need to serve it over rice. We also eat a lot of roasted cauliflower (cut I do small pieces and roast for 40 minutes, toss with parsley and green onions while warm). It's also good reheated the next day. With no carbs you just have to eat a lot more vegetables to he the full feeling. My husband has found that he eats one serving, waits 10 minutes and then eats another serving of veg to not be hungry soon after dinner.

Our family has been eating a lot of pasta, rice and bread with dinner lately, and I'd like to reduce that. Please suggest some low carb dinner ideas, sides in particular. We mostly eat chicken or fish, and rarely eat red meat but I am not unwilling to make it occasionally.
