We always stop in Florence too. No matter how late you pack and finally get out the door you can always make it that far the first night. Florence has slightly more restaurants and a mall that make it less skeezy than some other interstate towns. Savannah is pretty close to I-95 - that would be good if you have a half day or day to explore.
Do not go to South of the Border, unless you are looking to get stomach flu or score some meth.

Is there anything to do in Florence or Jacksonville? Or do you just stay in a motor inn? We have time so we might spend two nights somewhere - can you spend a good day with kids in Charleston?

Charleston has more stuff to do, Savannah is very close to I-95 and not undoable but it will take all day to get there. It will be too cold to swim outdoors but your kids would still enjoy an indoor hotel swimming pool! When we drive we usually get a late start after packing, stop in Florence and crash in a room and get up early to get to Florida asap.

South of the Border is scary, it looks like a good place to get murdered by a meth head and the food will give you diarrhea.

We are driving to Miami and back for Xmas. Had been thinking about Disneyland for a day or two but nixed that idea after feedback here.

Now thinking about Charleston, Savannah etc.. Does anyone have any thoughts on places to stay, ideally with nice stuff for kids to do? We have plenty of time, so would like to spend a day or two en route/coming back. Was thinking about a hotel with a pool but I guess it will be too cold to enjoy that anywhere north of Florida...
