The inspiration is in the seasoning. Go for a blue plate special. Chicken or salmon, cooked however you like them cooked (we bake both often but can season in a variety of ways). Roast some veggies. Get hooked on that addictive roasted broccoli recipe (toss florets in olive oil, salt and spicy red pepper flakes, roast in oven - can toss in pine nuts if you want, or not, if you don't want - I've also squeezed some lemon over the top before serving, which is lovely). Fall in love with brussels sprouts.
Take the PP's taco suggestion. Fish tacos with cabbage slaw. Chicken tacos with lime and cilantro and onion. Tacos with black beans. Grilled peppers and onions. Whatever floats your boat. If you can find ripe avocados, go nuts.
