Turkey pot pie!!

I used to do the full 2-crust treatment for pot pie, and loved it, but lately I've been doing it the restaurant style--just a dish of filling with a pastry disk on top. Pretty darn good that way too.

I accidentally defrosted an extra roll of trader joes pastry in the fridge overnight. I'm good on pies, what else can I use it for so it doesn't go to waste?
