You can make white potatoes without sweet potatoes or yams, but you cannot make only sweet potatoes/yams and not make white potatoes. The people who eat sweet potatoes or yams is significantly smaller than the people who eat white potatoes. That and you've also decreased the appeal by putting marshmallows in it (for many, sweet potatoes are plenty sweet without adding more sweetened products to it).

Yams are actually not related to potatoes. They just look like potatoes so people think that they are the same thing, that one is orange and one is white. But they are not and yams are much healthier for you, btw and lower on the glycemic index.

Yes, do the mashed potatoes and gravy! And if you don't mash the yams but slice them (I've got a great recipe; easy and beautiful presentation) they will have a different consistency than mashed potatoes and will be a nice complement.
