I'm under the impression that the "Nic" originally comes from Nike, as in Athena Nike (Athena in the form of the ancient greek goddess of Victory). (I know, a tangent, but how cool is that)

I really wanted to name our DD Nikita (this was before the show). Nikita is a boy's name in Russia but sounds very girly (along with another one, Sasha) and in retrospect, I still cannot remember why I didn't do this. You could even use Kitty as a nickname.

Nicolette without the "h"--I know a little girl by that name…uncommon and beautiful. Ha! And you could nickname her Nikita.

Nicholette looks like Nicorette gum.

I'd go with Nicole or Noelle, or a different first name and use Nicholas as a middle name (it'd work since it could easily be a maiden name or family name).

We use Nikolina or even Ines for nickname Nina.

In England Nicola is fairly common as a female name.

In some Eastern Orthodox countries (e.g., Bulgaria, Serbia) Nina is used as a feminine form of Nicholas. There is a St. Nina - her name is considered to be a form of Nicholas (very important Orthodox saint).

Go with Noelle and save Nicholas in case you have a boy. Or go with any N name, or for a middle name. Lots of ways to honor him. I like the idea of maybe Nichols for a middle name, such as Sophia Nichols Smith or Elizabeth Nichols Anderson

I'd drop the H. I think your family will get you are honoring the relative even if you spell Nicole without the H. Same with Nicola. Which I love as I had a friend in high school who was from London named Nicola and her name always sounded so pretty.

Any others I'm missing? I'd love to honor a relative, Nicholas, perhaps with our baby girl's middle name. She'll also be born near Christmas... but I'm not super-crazy about any of these. Maybe Nichola is the best of the three. I like Nicholas for a boy but we only plan to have one more child after this so may never get a boy.
