Usually PB&J or something quick that doesn't require the stove while we're cooking the other stuff.

We order in sandwiches..not turkey of course. Light, lots of choices..dinner is at 6.

We usually eat the big meal around 4 or 4:30 (still leaves time in the evening to grab another piece of pie or a turkey sandwich). My kids are 6 and 3, and they would revolt if no lunch was served. So we do a collection of appetizers for lunch--usually around 11:30. Roasted shrimp cocktail, cheese plate, some sort of hot dip, cut up vegetables, etc. That said, our Thanksgiving is small, just the 4 of us plus my parents so it's not a lot of trouble to make a few small appetizers for everyone to share. Would obviously be more labor intensive if you were serving a big crowd.

My family always actually had "Thanksgiving Dinner" at about 1pm. For dinner, we usually ate pie augmented with whatever leftovers we wanted. Last year was the last year I did family Thanksgiving. I did the usual thing and fed then-2 year old DD leftovers for dinner.
