I would not reccomend this if you are at all sensitive to rancid oil. A pinch of cooked flaxseed meal will wreck an entire dish for me.

I have heard about using olive oil as a binder instead of egg but I have never tried it.

You can make them without egg as binder, using only some flour, matzoh meal, or potato starch. The only difficulty is they are a bit fussier to flip without breaking. Press the potato together a bit with your hands before you put the latkes in the pan. Then, make sure you have a nice brown crust on the bottom before you flip. If you flip it before the crust forms, it is likely to fall apart.

I would love to make latkes this year but most of the family has an egg allergy. Has anyone made them without eggs? If so, how did they bind?
