OP here. Thank you all for the tips and ideas. My pot has a metal knob so the whole thing is oven safe to 500 degrees. I'm thinking a pot roast might be a good way to start!

Or better still. If you have a plastic knob, unscrew it and take it and the screw to the home improvement store and look for a metal cabinet knob that you like. Check the screw that comes with the knob to make sure that when screwed in, it leaves about the same length of screw as the original. Sometimes you're lucky and the knob can use the original screw. If not, you can go to the aisle with screws and find one that both fits the knob and is the right length.

Turn the heat down to low as soon as you put the pork in the pan, or the butter browns too fast.

Le Creuset's are rated only up to 375. So if you want to make something like no-knead bread, you're out of luck. But there are stainless steel replacement knobs available on Amazon.

Or, more accurately, check the temp rating of the plastic knob. Ours is ok up to 450, and most of the time we only have the oven at 300 or 350.
