My secret to perfect fries is to microwave the potato(es) whole to cook completely, then slice into fries and deep fry in peanut oil on high heat.

America's Test Kitchen has an awesome French Fries recipe just like you'd get in a restaurant. You need to register to log on to the site; my access expired, so I can't send you the recipe. These are cooked in a lot of oil but in the oven, so it's less messy then using a home fryer or fryer on the stove top. You will also need to dispose of the oil properly. Don't pour it down your sink. When it cools you can freeze it then dump it in the trash on trash pick up day.

Oven baked home fries are good too. Don't really have a favorite recipe; they're all pretty much the same.
