You could buy a bunch of TJ appetizers and just bake when you get home. Add in hummus/chips, fresh veggies for dipping (chop the night before), nuts and olives, maybe a couple cheese (also from TJ's, they have so many good ones!).
Another option is to make simple flatbreads. Buy some pizza dough, prepare the toppings the night before (caramelized onions and blue cheese, roasted vegetables with herbs and parm, etc.), then roll out and bake when you get home.
