I thought of another one (I'm the Bisquick poster)- again, not in the realm of super healthy, but place chicken breasts in a casserole dish. Top with sliced Swiss cheese (thin slices) and sprinkle with black pepper.

Mix can of cream of chicken soup with one cup chicken broth. Pour over top.

Melt butter and add to Pepperidge Farm stuffing. Spoon stuffing over top of chicken. Bake at 350 for about 45 mins.

*Note: I do NOT like casserole type dishes made with cream soups- ick- BUT, since you just eat the chicken out of this and leave the cooking liquid behind, it's actually really yummy and something kids would like.

Try making "pesto" out of spinach to add some veggies. I'm not really a fan of hiding veggies for the sake of hiding.them, but spinach can actually make a nice sauce. Ds also likes to dip his chicken in mashed sweet potato. We also like some of the Indian spiced simmer sauces...the supermarket has a few, and whole foods has a lot. Super easy and most of the brands have a few basic ingredients. Try a sauce like a Chinese sweet and sour sauce, and add pineapple and whatever veggies he.might go for...ds prefers carrots in his.

Use panko to make it crunchier. I bake mine and they turn out fine, but you have to drizzle butter or oil on the panko to get it to brown.

You can stuff ANYTHING in a chicken breast.

Lay the breasts on a cutting surface, and with a sharp knife held horizontally (parallel to the board), cut a "pocket" into each breast.
Pound the breasts flat.
Stuff each pocket with something yummy. Start with ham and cheese, then branch out to what else you like -- caramelized onions, dried fruit and breadcrumbs, olives, stuffing, whatever you can imagine.
You can bake these, but they're better pan sauteed. If you want to get really fancy, you can add a bread crumb crust before sauteeing, and/or a sauce.

I just pan saute and serve over "zoodles" in a butter sauce.

The only time I bake chicken breasts (or usually thighs) I do so with paprika and olive oil.

My 5 yr old picky eater generally likes teriyaki chicken. I just marinate those little chicken tenders in teriyaki sauce all day then bake them.

Marinate it in olive oil, balsamic vinegar, garlic and rosemary for 30 minutes and then bake grill or sauté. My kids don't usually like sauces or any kind of marinade on their protein, but they love this!

My very picky 8 year old is very challenging to feed healthfully -- he has a very limited repertoire of foods he will eat.
He loves baked chicken breast so he eats it 3-4 times a week -- is that terrible?
I'm happy it's healthy but I know I should be encouraging him to broaden his horizons.
We do chicken Parmesan, apricot chicken, chicken with bread crumbs...
Any other good recipes for baked chicken breast that your kids enjoy?
