I'm the latke maker who freezes in advance - in your case then I think it would work well, depending on how far out of town and if you can keep them on ice long enough. Make them this weekend and freeze - get it out of the way, and Chanukkah is only 3 weeks away! As long as I'm not doing all my other cooking tasks on the same day, once I get into the frying groove I find it find of therapeutic to cook them all, as long as I can get some peace and quiet away from the family in the kitchen.
