We do GF Thanksgiving every year. We use cornstarch for the gravy and use GF bread in the stuffing. It hasn't been that big a deal. Pillsbury just came out with GF dough that I'm dying to try.

What tried and true favorites are you looking to replace?
this is our first GF T'day, but here's what we're planning to do of the not-already-GF stuff.

-Make GF cornbread in advance to use for stuffing
-Get GF pastry crusts to use for pies
-Maybe make/buy GF dinner rolls, but might just opt for cornbread

I do Alton Brown's Mac N Cheese with GF flour & Rice Krispies or K Corn Flakes swapped in for the crunchy broiled topping. Carmelized Brussels Sprouts with bacon & roasted almonds. Pamela's mixes all doctored up for dessert. A big second for the gingersnap crust idea for pumpkin pie, you can also do a FL cheesecake with gingersnap crust, the Mi-Del brand ones are good.

As a backup, when I do the turkey, in case there isn't enough in the pan for gravy, I buy a few containers of Trader Joes turkey gravely that is GF and actually tastes pretty good.

I make a really yummy ( and good textured)stuffing using Aleia's premade gf stuffing cubes. You can find them at WF or Giant. Just add chicken broth and seasonings. I don't stuff the bird but bake it in the oven.

A lot of my Thanksgiving favorites are naturally gluten free: turkey, mashed potatoes, sweet potatoes, cranberry sauce, steamed green beans. I think you can have a really good feast without any exotic substitutes, just leave out things like rolls.

But, here are some things we have enjoyed:

Stuffing - leave it out, or use a cornbread stuffing (make sure you start from a GF cornbread), or a wild rice stuffing. I remember seeing a recipe that looked good with wild rice, dried cranberries, nuts, and some other things - let me know if that sounds good, and I'll see if I can find it again.

Gravy - thicken with GF flour or mashed potatoes. The flour content is small enough that I've never noticed the texture difference of GF flour.

Pie crust - there are some good GF ginger snap cookies; get some of those, crush them up, and make a cookie crust (use a graham cracker crust recipe, just substitute ginger snaps). This makes a good base for pumpkin or pecan pie.

Instead of apple pie, make baked apples, or an apple crisp with an oat crumble topping.

Nearly any vegetable dish will be GF (or can easily be made so). I always like a veggie tray for appetizers, or a cheese plate. Candied nuts are a good sweet snack.

I'm not gluten free BUT I subscribe to vegetarian times and the current issue has a lot of ideas for thanksgiving that are, I believe, noted as GF. Just browse it in line at the store - there are some fantastic ideas there.

Any root veggie dish could be gluten free, for example - and the issue has a number of those.
