Yes. I've done just that many times and it works out great. I have a basic slow cooker w/o timer or warm setting. It's only low or high. If you leave it for that long, use the low setting. My recipes typically don't call for that much time, but it works out just fine to go over by a few hours.

To directly answer a PP's question...
A recipe calling for 8 hours is generally the low end of time needed for the dish to be yummy. In general, with slow cookers you can leave it on low for hours more no problem. (And yes, most cookers do automatically go to warm.)

It really is one of the easiest, most forgiving ways to cook. I use mine at least once a week, usually more. It's so awesome to come home from work and smell dinner waiting for you!

My slow cooker ($40 from Target, so nothing fancy) has a timer - once the timer runs out, it automatically turns to the "warm" setting. I set the timer for 6-8 hours and leave the house all the time - I love walking in the door to dinner ready. :o)

possibly-- does your slowcooker automatically turn to warm? mine does.

I use my slowcooker 2-3 times a week. one of my 'go to' slow cooker recipes is chicken salsa--- chicken breasts, beans, sometimes corn, a can of salsa- voila.

I also have a greek chicken recipe that we really like with chicken thighs- but it does tend to overcook if I leave it all day.

I was not being bitchy... Slow cookers achieved popularity in the US during the 1970s when many women began to work outside the home. They could start dinner cooking in the morning before going to work and finish preparing the meal in the evening when they came home


I would have said that is why they were invented but that is not correct it is the reason for their popularity.

A recipe to get you started



Crock Pot Roast Beef Sandwiches

Roast -- 3 to 4 lb.
½ cup brown sugar
1 pkg. Onion soup mix
½ cup water
1 chopped onion
1 pinch garlic powder
Salt and pepper

Place 3-4 lb. roast in Crockpot with brown sugar, onion soup mix, water, chopped onion, a pinch of garlic powder and salt & pepper to taste. Cook on low for eight hours.

Serve on warm onion buns.

I'm guessing it should be OK on low -- recognizing slow cookers these days run hotter than twenty years ago... if you cooked on high my sense would be four to six hours max.

I also suggest you consider a larger / solid piece of meat (roast, or whole chicken for example) vice smaller pieces like chicken thighs... again, because slowcookers run hot these days.

I am new to slow cooking. I would love to put dinner on before I leave the house, but I leave at 7:45, and we don't return home with the kids until 6 pm. It would be safe to let food sit, even if it cooked for 8 hours, right?
