A favorite in our house, if you happen to have the right ingredients is cherry tomatoes and shrimp over creamed spinach. Saute or roast the tomatoes with garlic and thyme until they start to burst. Add the shrimp, cook until the shrimp is cooked through. Serve over creamed spinach (either frozen and cooked in microwave, or fresh, sauteed before cooking the tomatoes and "creamed" with cream cheese).
