Chili or broccoli cheddar soup. We're having friends over for football tomorrow and I'll make the chili with cornbread then, and last night I made the broccoli cheddar soup which is also really easy- sautee a Vidalia onion in about 4-5 tbsp of butter til soft. Then add 1/4 cup flour and make a roux, followed by 1 cup of chicken broth, about 1 cup of milk, and 1/2 cup cream or half and half. Let that simmer and get thick while you steam 4 heads of broccoli and shred the cheddar cheese (you will need about 3 cups). When the broccoli is done and the soup is thick, add the broccoli and cheese in and let it get all hot and bubbly. Check for salt and pepper and add. I usually run my immersion blender through a few times to break up some of the broccoli and get it nice and creamy, but I leave some of the florets more whole because I like that texture. Serve with crusty baguette!

If I have the day at home: a pot roast or chuck steak braised slowly in a low oven for hours. For a quick after-work meal: spaghetti with meat sauce, or chicken soup from the freezer.

We had homemade chicken pot pies tonight - individual size in ramekins. I roasted a chicken a few days ago and used the leftover meat + stock I made from the carcass.
