But Even as a vegetarian, I consider spaghetti squash a nice side dish, not a meal. It's still a veggie and not filling enough as a meal.

Try a lemon tahini sauce-tahini, lemon water garlic and salt blended together-and some peas or scallions.

I cut it in half, scoop out seeds and put into crockpot with some pasta sauce and raw sausage (cut into smaller pieces). Cook on low. Wen its ready, scoop out the insides and use pasta sauce with sausage. It's easy and delicious.

It goes great with pesto.

Do what PP does to cook: halve, scoop seeds, microwave halves until JUST fork tender about 4-6 minutes/half depending on size, let cool, then scrape out with fork into "spaghetti." We then make it into salad with cubed tomatoes (flavorful beefy heirlooms are best if you can get them), minced onions/garlic/shallots, chopped fresh basil, and oil/vinegar.

I slice it (carefully), microwave each side for 6-7 minutes and eat wither with spaghetti sauce or olive oil and parm.

I just cook it for the hour - rip it up and toss butter on it and it's good to go.
