Top baked potatoes with cheese, green onion, bbq meat, sour cream. There is a bbq place in TN we used to go to that does this. So good.

I would probably try to adapt a pork and potato stew recipe like this one:
http://www.pillsbury.com/recipes/home-style-pork-stew/3d5fd2aa-cfa2-432c-a1bd-d4db6a31677a

If the pulled pork has a lot of barbeque sauce on it, you can give is a light rinse, and rinse some of the sauce off. Then precook the potatoes about 8 minutes in the microwave, partially steam the veggies (I would do about half the time on the package) then toss it into a Dutch oven on the stove to stew for like 45 min-1 hr or put it in a crock pot on high for like 1.5-2 hrs. Since the meat it cooked and you partially cook the potatoes and veggies, it will come together faster and that amount of time will be enough to meld the flavors together.

Note if you don't like this recipe, just look for any pork and potato stew recipe that appeal and adapt it.

For eggs: add to a fried rice, make veggie frittatas, omelets, quiche, egg salad, potato salad, deviled eggs. Eggs can be used in panko-crusted fish or chicken (so something that doesn't taste of egg if you get sick of eggs). Also, hard-boil some to put on salads or take for breakfast on the go.

Don't store the potatoes in the fridge, either. A big favorite in our house is BBQ pork or chicken hash. Leftover pulled pork is also good if you put it in a baking dish, followed by a generous layer of grated cheese and topped off with cornbread batter. Bake until cooked though.

Don't store the potatoes near onions. It makes them rot faster. You could make a big batch of potato soup!

Pulled pork goes well in tacos if it's not covered in BBQ sauce.

Pawn off some of the potatoes on friends/neighbors.

Eggs will last for weeks. You can hard boil some of them and they'll last even longer.

Freeze the pork.

Cook and eat the greens. Even a huge bag shrinks to nothing once it's cooked.

Give some to the neighbors or people at work. Or a church that collects food. Even a soup kitchen if they want them.

Eggs: You can mix them well and put them in a pan and Steam it. I add salt, pepper and maybe some mushrooms or you can add whatever small pieces of veggies or ground meat in there.

Potatoes:
Stew with the pulled pork

with the collards and eggs I agree, quiche, omelettes, frittata etc.

Sub the collards for chard, add some pulled pork and make this cazuela

http://projects.washingtonpost.com/recipes/2006/10/04/patatas-con-acelgas-en-cazuela-cazuela-potatoes-ch/

You can freeze the pulled pork.

The eggs will last for ages. You could do a quiche though.

So my parents came to town, and in the aftermath I find that we have:

Way more pulled pork than 2.5 people can eat
10lbs of russet potatoes
huge bag of collards
several dozen eggs

Any creative ideas? I have other vegetables and plenty of pantry staples, I'd just like to try and use the ingredients above before they go off.
