I would probably try to adapt a pork and potato stew recipe like this one:

If the pulled pork has a lot of barbeque sauce on it, you can give is a light rinse, and rinse some of the sauce off. Then precook the potatoes about 8 minutes in the microwave, partially steam the veggies (I would do about half the time on the package) then toss it into a Dutch oven on the stove to stew for like 45 min-1 hr or put it in a crock pot on high for like 1.5-2 hrs. Since the meat it cooked and you partially cook the potatoes and veggies, it will come together faster and that amount of time will be enough to meld the flavors together.
Note if you don't like this recipe, just look for any pork and potato stew recipe that appeal and adapt it.
For eggs: add to a fried rice, make veggie frittatas, omelets, quiche, egg salad, potato salad, deviled eggs. Eggs can be used in panko-crusted fish or chicken (so something that doesn't taste of egg if you get sick of eggs). Also, hard-boil some to put on salads or take for breakfast on the go.
