It's not exactly a recipe, but I cut up as many yellow potatoes as I can fit on a baking sheet. Then I dump them in a large Tupperware container with olive oil, salt and pepper, pimenton, paprika, whatever seasonings sounds good basically. Put the lid on, shake it hard, then bake on a baking sheet in a 400 oven til the bottom is brown. Then I broil the top a couple minutes and serve. Super easy and no turning the potatoes.

This is my go to hash brown recipe. I don't use scallions though. The trick is to let them sit for several minutes before turning them. I usually let mine sit and cook for 6-7 minute intervals and then turn. I use butter and always Yukon Gold.

I do something similar. Sometimes I saute a yellow onion and diced red or green pepper. I will put the diced potatoes in a heated pan with olive oil. If you aren't too calorie conscious, sometimes a little butter/EVOO together.
