Electric skillet might be useful.

How long do you think you will be there, I would conisder buying an induction burner cooker, they heat up incredibly fast/even and are very powerful for a single burner you can plug it. We used it all the time when we were renovating our kitchen to make big pots of chili/soup/etc.

How do you do tacos in the microwave? Can you brown meat in there somehow?
m

Canned beans, canned chilli, jarred salsa. Add some avocado and bags of greens and shredded cheese. Maybe some pre poked rice.

Gotta get a toaster. Toast, bagels, toaster waffles, etc., in the morning. That also opens up the lox'n'cream cheese front--nice on weekends.
Also a good opportunity to increase the family's fruit intake. None of us eat enough fruit.

For a little more expense you get a little more versatility: toaster oven.

Hot dogs, Italian sausages, and most basic vegetables (broccoli, cauliflower, greenbeans, etc.) are all micro'able.

Perhaps buy a crockpot?

I make quesadillas in the microwave. Black beans and cheese melted up. Any kind of fresh topping.

You can cook bacon and eggs in the microwave (grease a ramekin and put egg inside, puncture the yolk).

Maybe buy a crockpot and make stew or chili?

You could also buy rotisserie chicken and pull it off the bone. Use the meat as filling for tacos (heated in microwave). A little BBQ sauce and it's pulled chicken.

Good luck finding a great house!

Microwaved baked potatoes with microwaved steamed broccoli & other veggies topped with grated cheese, salsa or hummus is one thing that comes to mind.
You could maybe steam a piece of fish - season with a mix of soy & mirin for teriyaki sauce
Oatmeal in the micro is pretty good Good luck!

My family is staying at a suites type hotel while we search for a home and I'm interested in getting some supplies for dinners so we are not forced to always rely on takeout or going out to eat. We have a microwave and a small fridge. Any great ideas of real meals we can have that don't require conventional cooking methods? Something beyond sandwiches, salads, or microwaveable prepackaged food?
