Stratas are good because you assemble the night before and bake in the morning.

Quiche and frittatas are good, too, and you can bake them ahead and then re-warm in the morning or serve at room temp.
This is a good recipe. I've also used it as a base and swapped in cheddar and broccoli (no meat or swap in cooked bacon or diced ham).
