The 15% is probably for the centering person you dealt with. The servers should still get $50-$100 each.

OP here - Catering bill was 5k, there were 4 servers. I asked the caterer what was standard, and they said 15%....was that way off then?

How much is the catering bill? Typically if you hand each server $40-50 bucks they will be thrilled.

I take the same approach to contractors who do work on my house. (Assuming the work is finished and good.)

I prefer to hand cash to each server individually. I worry that if I roll it into the payment to the vendor, the individual servers may not see it. Too many stories about unscrupulous or desperate business owners.
