Olive oil and balsamic--just swirl them in from the cruets on the counter, then add salt and pepper. Just did this in a lettuce, avocado, red onion salad, and added croutons. Was terrific.

always make:
extra virgin olive oil - cold pressed
dijon mustard
white wine vinegar
salt and papper

also make:
organic sunflower oil
wasabi paste
lime juice
salt and pepper

quite like:
extra virgin olive oil - cold pressed
red wine vinegar
lemon
salt and pepper
and this is also good with salads with beans and pulses in them.

My favorite is a barefoot recipe.
1/4 cup lemon juice (fresh)
1/2 cup olive oil
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper

Really awesome on butter lettuce. I make it twice a week.

I make one really close to this one, too, although I use "white balsamic" that I get at Trader Joe's. It is indeed delicious.

2T Dijon
5T olive oil
2t fresh chopped basil
Pinch garlic
Salt & pepper to taste.
Shake and pour. Delish.
