This is a good idea. Use Earth Balance or another dairy free margarine and check the marshmallow label for dairy. Most commercial marshmallows have eggs but not dairy. You could add cocoa powder and semisweet chocolate chips (check labels but a lot of semisweet chips are ok). If you want to be fancy you could do two layers (chocolate and vanilla) or marble it or even do a thick layer if melted chocolate with a little margarine to smooth it out.

The Rice Krispy treats in the news recently were only an issue because the camp cook mixed in peanut butter.

Thanks, all. I will check with her teacher and see if I can use a mix. Rice Krispie treats make me nervous because of what happened recently. Maybe we'll do Popsicles - DD loves them.

I would double check this. You don't want to put in the effort to find you can't pass out the treat.

Sticky Fingers can do dairy and wheat free. I don't think it's a peanut free facility--and that may be a deal breaker for some kids. You could call and ask.

My kid really really liked rice crispie treat sushi -- which is rice crispy treat with a Swedish Fish on top. You might be able to figure out how to make that dairy, wheat, and peanut free.

Betty Crocker makes gluten free brownie, cake and cookie mixes that are made in a dedicated facility. The mixes area also nut free but call for butter as an add in ingredient. The do however offer dairy free options on their website by substituting oil or applesauce for the butter:

I am a celiac and think the brownie mix is really good and I use the yellow cake mix to make mini cupcakes.

15:08/15:14 again - I would also check with the teacher on the wheat-free issue to figure out how strict you need to be. Our kid is a celiac so we have to be really strict / avoid cross-contamination / etc., but I know there are lots of gluten-free folks who don't need to be quite so strict about it.

Otherwise you can also just buy GF/Dairy Free mixes - they're generally on the top shelf in with the other mixes. And if you're feeling lazy but want semi-homemade they now have GF/Dairy free break-and-bake style cookies. Brand name Immaculate - I found them at my local Safeway.
