You might Google for recipes that use cashew cream instead of regular cream. There's still fat, but it's a different type, and cashew cream is really, really delicious. Or maybe try something with roasted vegetables? There's not much that isn't better with roasted cherry tomatoes.
Also, this is a baked dish, not a traditional primavera, but it's got plenty of veg and is sort of creamy without being overly heavy.
