I'm not the OP, but thank you for these recipes 20:33! Everything I've ever tried by Deborah Madison has been awesome and that roasted veg and lentil soup looks amazing.

Black bean soup freezes well.

Really most soups do and you can make them hearty and a one dish meal, or add a simple salad.

This is sort of a tangent, but have you tried Muir Glen tomatoes or sauce? I don't tend to have much brand loyalty, but I think they have the best-tasting canned tomatoes.

I always think chili and soups are better after they've been in the freezer! There are two chili recipes from the Moosewood Cookbook (or restaurant) that we love:

I suspect you could sub ground beef or turkey for the bulgur in either recipe. We've used quinoa, which worked great, too.

I love the Chicken Enchilada Soup on Skinnytaste. She presents it as a crock pot recipe, but I just cook it on my stovetop. It only takes about 30 minutes. I double the recipe and freeze the leftovers. You could always leave out the chicken or sub it for a vegetarian item.

So I am looking for foods that i can cook and freeze in several batches. I would appreciate ideas, esp vegetarian ones.

There is one that i tend to make quite often. I make this pasta sauce and freeze it, then when i need it i just boil ww pasta and add the sauce, both for home or school lunches.

Canned tomato sauce (organic ones from Whole Foods don't taste good to me, so while I am still searching I get Furmanos)
Ground beef
Onion, chopped small
Veggies (this is because I feel my kids they should eat more green stuff, so I often put in my food processor courgette, celery, broccoli, cabbage, carrot, and make it a paste, sometimes i skip this step)
Olive oil, salt, pepper

So you start with putting 2-3 tbsp of olive oil in a skillet and cook the onion and the veggies if you plan to use them. This should cook slowly for about 20 minutes at least. Then add the ground beef, I usually use a fork to mash it when it starts cooking, so it does not crumble. After 10 minutes approx, you add the tomato and cook for another 15 minutes. Add salt and pepper to taste.
