It's not very precise.

The chicken will release some liquid and you don't want it to be completely submerged. I would say 2 lbs of thighs, 1 bottle of sauce.

Not healthy but ourbestbites.com also has a recipe Hawaiian pulled pork and mango slaw. I am thinking of making this weekend.

1. Frozen chicken breasts, jar of pasta sauce, package of frozen spinach.
2. Chicken & jar of tomatillo/green salsa.

Definitely going to try some of these! I hate when you find recipes that have 5 steps and 4 dirty dishes to start; defeats the point!

Sorry, that should be a jar of peperoncini.

hunk of beef + a can of peperoncini, drained, with a little water to cover the bottom of the crock. Serve over brown rice. So yummy!

I made pulled chicken and pork with BBQ sauce. It was good and I'm not a bbq tasty person.

Try to go exotic with curry stew! It's delicious.

I invent my own stuff so, I usually work with whatever is in the fridge and pantry, so don't have an exact recipe, but i'm sure you can find it online.

My concern is leaving the crockpot on when I'm not home.

Agree w Skinnytaste. The chicken enchilada soup is amazing and healthy.

I like Kalyn's Kitchen for Crockpot recipes, too. She has a subsidiary site called Slow Cooker from Scratch (but not all of those recipes are healthy).

Crockpot 365 has a great recipe that sounds disgusting, but is actually delicious:

And there's a whole "Light" section on the site

Check out skinny taste. She has great recipes especially the Santa fe crock pot chicken. She posts nutrition info too

Soups are an easy and healthful crock pot dinner.

Split pea soup is a favorite in our house. I prefer using a ham hock, but you could probably do a veggie version or use turkey bacon. An immersion blender makes this much easier.

We haven't tried our black bean soup in the crock pot yet, but can't think of a reason for it not to work. 2 cans black beans, rinsed and drained. Smash one can's worth with a potato masher. Add one bag frozen pepper strips, 1 jar salsa, 1 pound cooked meat or sausage (or the veggie crumbles), 1 can broth.

Going to try this one later this week:

Since we don't have 3 lbs of tomatoes from our patio, I'll be using 2 large cans of whole, peeled tomatoes.

I think we've done butternut squash soup and a carrot ginger soup, too.

Beyond soups: Chicken thighs with barbeque sauce. 8 hours on low, shred and serve on buns. Works with pork butt, too.

We make stews.
Lots of vegetables, meat, cover with chicken/beef broth, add seasonings and cook on low for 6-8 hrs. Browning the meat first improves the taste. I like Penzey's seasoning mixes for this.

I already do pork loin in the crock pot. Also chicken with black beans and taco seasoning for rice bowls or tacos. And steel cut oatmeal. Any other healthy recipes? It is so nice to come home to a fully cooked meal.
