OP,

Not sure if you're still reading, but hard cheeses like Parmesan stay fresher longer than soft. If you have a wedge of parm off a block, you can grate it and go back to it. If it gets a little mold on the outside you can cut it off and it will still be good.

You always have to look at the package. I have found a few that are molding with a good date and unopened.

Actually I am pretty smart, just not about cooking and food, an area where I have very little interest (hence, the lack of knowledge).

OP here: Thanks everybody. I simply can not go through an entire bag of cheese that quickly without my ass exploding in protest.

In the future I will pour two thirds of the package into two separate ziplocks and freeze those, and then plan cheese-heavy dishes to use up the refrigerated third.

I only ever use cheese for melting purposes (baked lasagna and the like) so this should work. Thanks again!

Only good for 5-7 days once you opened the package. Next time if you aren't going to use it up in time, try freezing it.

You can also freeze, it, especially if you are going to use it for melting.

The "fresh until" date is null and void once the package is opened. My one piece of advice would be not to put your hand in the package when you're getting the cheese out (pour it out instead). Keeping it sealed doesn't really make a difference once spores, bacteria, etc. have been introduced.
