We eat it all week - well, we eat it for as long as it lasts.

Can you give the recipe for this? thanks

+1 I think my picky kids might really go for this.

I premake a batch of breakfast burritos on the weekend. Wrap each one in tin foil and freeze. Remove from freezer, unwrap, then wrap loosely in a paper towel and microwave for 1 1/2 minutes. Done and no clean up...and my kid
loves loves loves these.

They may also enjoy soft boiled eggs which are fun because of the equipment. the little egg cups, the egg topper and the tiny spoon to scoop out the egg. This and a half grapefruit was pretty much what I ate for all of elementary school.

+1 on the egg in glass bowl in microwave. When I had an electric stove, I would do it in the microwave instead. With gas, it's just as fast using the stove....

Scrambled eggs, diced bell pepper, sliced green onion, shredded cheese, and a few halved cerry tomatoes. I mix it up the night before and store in the fridge overnight, then microwave in the morning (40 seconds, stir, then another 20-30 sec). Serve on a plate, or wrap in a tortilla.

Hard boiled eggs are also popular in our house. I cook a dozen at a time, and we eat them all week. They can be sliced and layered on a piece of toast & cheese for a breakfast sandwich.

Scrambled eggs with cheese is pretty fast. I eat the same thing each morning and it took me exactly 4 minutes this morning from the second I opened the fridge until I sat down to eat - I toast a whole wheat waffle in the toaster oven and scramble one egg with cheese, adding in one microwaved vegetarian sausage patty at the end.

Make individual frittatas in muffin cups in advance and then reheat? Or quiche? A strata?

I know an omelette is fast, but then there's the smell of frying and the clean up and I'd just like to find something I can make in advance that re-hears well and is yummy. My 2 and 4 year old live their omelette with shredded cheese, but I'd like to have a faster breakfast routine this fall.
