Real champagne only comes from the Campagne region of France (and is legally protected as such). There is champagne etiquette, which you should not mix champagne with juices. However, it's great with regular sparkling white wine.

Yes technically if it's not from "Champagne" then it's sparking wine, but same dif.

I like prosecco in mimosas. It is a little sweeter so it doesn't clash with the OJ.

Prosecco. I like Riondo, and you can get it for around $10-12/bottle at finewine.com.
