Read this website. It has never steered my husband wrong. He uses their techniques for both brisket and ribs.

Received and offset smoker as a gift and I don't have the first clue about using it. Any suggestions for recipes for this newbie? I assume it would be easiest to start with chicken, but I would eventually like to try a pork butt and beef brisket. Thanks!
