Buy a round of Camembert or other good Brie that comes in its own box. Slice off top rind. Line. Bix with foil. Pop cheese back in. Spread with fig jam. Top with some thyme sprigs if you have them. Bake in 300F oven for 10 minutes or until oozy in the center. Serve with crackers or baguette or whatever.

Slice a baguette and toast. Top with chopped tomatoes, basil and olive oil. By the time the toast is done, the topping is made.

I'm doing this this afternoon. I'm throwing in watermelon and fine-diced zucchini, since I have them and need to use them.

Garnish with some chopped fresh herbs or scallions on top.

I'm doing this this afternoon. I'm throwing in watermelon and fine-diced zucchini, since I have them and need to use them.

Garnish with some chopped fresh herbs or scallions on top.

Cheese and crackers tray. Spread some grapes and almonds around it, it will look fancy.

Quesadillas. Cut into wedges, arrange on big plates, sprinkle with chopped cilantro or scallions or both.

Trader Joe's freezer section. Full of heat-and-serve options.

Slice a long baguette (toasting optional) or buy a box of Melba toasts.
Sprinkle toasts with blue cheese or Gorgonzola cheese crumbles in a tub in the dairy aisle. 1 small tub per baguette - there will not be a ton of cheese on each, but it is flavorful.

Drizzle with honey
