I made a tasty 4th of July fruit tarte with raspberries, strawberries and blueberries, but you could do one with only blueberries. Really delicious and really easy.

For the crust, spread a package of sugar cookie mix (the kind you buy in the refrigerator section of the grocery store) into the bottom of a baking pan or dish. Bake at 350 for 12-15 minutes until golden brown, then let cool.

In the meantime, blend 16 oz. of softened cream cheese, half a teaspoon of almond extract, and a quarter cup of sugar in a mixer until smooth.

Spread the cream cheese mixture over the crust then arrange a layer of fresh fruit (in this case, blueberries) over that.

Best if allowed to chill in fridge for at least half an hour or so.

It was so good, I've made 3 more of them since the 4th!

(note, makes more like 6 mini loaves, and can safely cut back the sugar a bit). Freezes very nicely.
As others have said, blueberries themselves freeze really well. and there is nothing like blueberry muffins in February.
Also pancakes and smoothies.

Freeze the berries and thaw out what you need for recipes later. Frozen blueberries are also great to toss into smoothies.

Jam! Super easy, uses a bunch of berries, will lasts while and you don't need to do the canning step if you make a small batch and then stick it straight in the fridge.

Usually blueberry crisp is my go-to recipe when I have a big surplus. You can make a make it with less sugar and eat it for breakfast. Or top with vanilla ice cream for desert! For some reason I find it doesn't have the somewhat cloying intense cooked-blueberry taste as pie, but obviously they're still cooked. And it uses a lot more berries than coffee cake, muffins, etc.

You could also do a spinach salad with berries, feta, and almonds. I've seen some good recipes for blueberry/watermelon salads too. Or add handfuls to smoothies. We make and freeze blueberry pancakes (mostly for easy breakfasts for the kids). On a different note, I made a great batch of homemade strawberry lemonade (I think it was a Emeril recipe) recently that could probably be adapted for blueberries. Oh, and lots of yogurt parfaits!

My folks just brought me 3lbs of blueberries, which is great except I bought two pounds at Trader Joe's yesterday. I'd like to find some interesting, healthy uses for all these berries, beyond just muffins. I don't love pie and am generally not a big cooked blueberry person. Something with blueberries and lemons would be good. I'd ideally like to freeze part of whatever I make so that I don't gain 10 pounds eating yummy blueberry baked goods. ;

And, yes, I know how to use Google and find recipes. I was just hoping other posters might have some fun or delicious recipes that they'd like to share. Thanks!
