Angel food cake with blueberries, strawberries, rasberries, blackberries and whip cream. Fresh and tasty. It's also good with a little bit of ice cream.

baked bananas: slice bananas, top with brown sugar, butter and a splash of OJ (and rum, if you have some around). Bake. Really good with vanilla ice cream.
Or just do ice cream sundaes.

Grilled peaches and pears. Just slice them in half, pit them, sprinkle a little sugar and oil on them, and put them right on the grill, over foil if you like. Delicious.

blueberry crumble!
Allow a stick of butter to soften a bit.
Coat a pint blueberries with about two tbsp of sugar, and a tbsp or two of flour, and a squeeze of lemon. Put them in a buttered pie pan.
Combine 3/4 c. flour
1/2 c. quick-cooking oats
1/2 c. light or dark brown sugar
1/2 tsp vanilla extract (you can skip this if you don't have it. i sometimes use cinnamon instead)
1/2 tsp kosher salt
and then add the butter to the dry mix. You can just kind of squeeze it all together with your hands until the butter is fully combined with the dry ingredients. It will be thick and look almost like you could roll it.
Crumble the topping over the berries in large clumps.
Bake at 375 for a half-hour or so. Serve it warm with ice cream! It even reheats well in the microwave.

Strawberry shortcake. Buy those sponge cake dessert shells or an angel food cake, some whipped cream, and some strawberries and you're done.

The pie idea assumes you don't need a food processor for your crust. Take your pastry blender and rolling pin with you. Or, it's the beach--buy premade crust from the freezer case.

Strawberry shortcake. Use drop biscuits (Bisquick is easy). Slice strawberries, sprinkle sugar, whip cream. Substitute other fruit if better.
Peach/blackberry pie, vanilla ice cream.
Buy an angel food cake, and slice it horizontally into 3 or 4 layers. Spread sherbet thickly between the layers. Frost with whipped cream, cover with plastic wrap, and freeze for 30-60 minutes to firm up the whipped cream. Be sure you cover it--whipped cream will pick up freezer taste quickly.

Apple tart. Use puff pastry for the crust. Slice apples and sprinkle with cinnamon/sugar. Dot with butter. Bake and serve with ice cream.

Subject: easy dessert to make at the beach?
We are headed on our annual beach vacation and one night I'd like to make (or assemble!) dessert for the house- however, this is a typical beach rental with limited pots and pans, no food processor or mixer, etc. Any ideas for an easy dessert I can make that doesn't require lots of ingredients or equipment? TIA.
