Try Indian food with the spice dialed down - our basic weeknight dinner is dal (lentils), some sort of curried vegetable, flatbreads (roti) and yogurt.

Quiche - you can make mini quiches using muffin tin, mine is just eggs, milk, cheese, spinach or broccoli, spices, and the crust is optional.
DD's favorite pasta is just olive oil, black pepper and parmesan
salad with cucumber, tomatoes and feta cheese
often I just do a bunch of little things like fruit, carrots, hummus, cheese, crackers/toast
scrambled eggs with feta or cheddar

I started making that for DS. He loves it! I toss cubes with some stir-fry sauce and pan fry to get it crispy. Even the adults agree it is yummy. You can combine the tofu with stir fry or use it in place of meat on dishes.

Do your kids not like pasta at all, or do they just not like boring pasta? Because the world of pasta is full of vegetarian things that are not boring.

Homemade pizza is big in our family. We do stirfry all the time without meat. If you're grilling your hotdogs and burgers, you can also grill vegetables (especially corn, in the husk).

Some of our favorites:

Pasta Bake - you can get some great creaminess and crunch with low fat cottage cheese and just a little shredded cheese on top. Add veggies like peas, broccoli, or mushrooms.

Quesadilla- bean, veggie, cheese mixture

Roasted veggies with rice or quinoa. Roasted root veggies are a favorite here.

The big salad. Great meal for the summer. Chopped raw veggies. Hard boiled egg. Often we will roast chickpeas

Bean salads. Mix up some black beans, white beans, cubes of cheese or shredded mozz, some corn, avocado, tomatoes, basil, cucumber, maybe a few tortilla chips for some crunch.

My kid doesn't eat the whole salad, but he'll cherry pick the stuff he likes.

How about ravioli? Lots of non meat fillings to choose from. Pizza (especially if you assemble your own at home you can go light on cheese and add healthy toppings). Veggie kabobs (or you can add a little fish or chicken and still keep it light on meat that way). Omelettes. Breakfast for dinner.

This summer we have been eating too many hotdogs and hamburgers. It is grossing me out... Does anyone have any suggestions for kid friendly vegetarian meals? My kids like beans and rice so we do tacos.... they don't love plain pasta and sauce. Any other suggestions? We need to back away from the meat! Thx!!!
