Leftover (frozen) ham from Easter, served with some steamed potatoes and a veggie one night, then available for lunches after.
Chili
Pork BBQ
Homemade veggie soup

All these made ahead and frozen, taken in a big cooler.

Get a large amount of local fish and grill or broil it for Dinner #1. The next night, make fish tacos with the leftovers for Dinner #2.

Sprinkle chili powder on the fish when you reheat it. And never put cheese on fish tacos. Cabbage, lime, chipotle mayo, and avocado slices. Vinegar optional on the cabbage.

Fish tacos.

Grill some local fish & serve with tortillas, avocado (or guacamole), shredded cabbage, shredded cheese (optional), and salsa or another sauce of your choosing. We often do a sauce mixing chipotle peppers and yogurt, or yogurt (or sour cream), garlic, and lime juice.

Last summer I saw a "recipe" someone posted here as a pool dinner- tortellini tossed with some olive oil and seasoning, sliced chicken sausage, red pepper strips. I can't remember if they also said baby spinach or if I just added that on my own, but I made that one day last summer and it was delicious! You could add in lots of other veggies too- olives, artichokes, whatever. It was good at room temp AND cold and easy to transport in a cooler.
