This gets my vote -- especially with grape tomatoes and a few toasted walnuts.

Champagne vinegar makes a great vinaigrette PP and you're right it would be lighter tasting than balsamic.

Any fans of champagne vinegaette as a "light" dressing? I hadn't thought of adding blueberries but that would keep the salad summery fresh.

Add some feta cheese. If your guests aren't allergic, add some walnuts or pistaschios. I agree w/PP about balsamic & olive oil dressing, but grate in some fresh garlic and add a dollop of dijon or brown mustard.

Add pumpkin or sunflower seeds and carrot slivers. Make your own light dressing (whisk balsamic and oliv oil). Add gets if you like it and maybe blueberries.

From Costco I have the spring mix, red/orange/yellow peppers and cucumbers. I'd prefer to leave the grape tomatoes out of the salad so I can pair them with the mozzarella balls. I still need a Giant run but can't think of a good way to pull together the green salad. Any fresh ideas?
