OP here - thanks for these ideas. I even like some for my lunch! Sorry to say my kids would not eat foods like sushi but that sounds like a refreshing summer lunch. Many of these will work - thanks again.

If you go the sushi route, I would use tofu, avocado or other vegetables but definitely not raw fish.

Also, may be mini cheddar muffins or mini frittatas.

Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or rolling pin. Brush chicken with lemon juice, and sprinkle with salt and pepper. Dredge chicken in breadcrumbs.
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken to pan; cook 3 minutes on each side or until chicken is done. Remove from pan; cool, place in refig.
Day you need lunch
Tortilla, carrots, avocado, cilantro, lettuce, a little ranch dressing and the chicken. Wrap in foil, good for three to four days worth of lunch.

You could try quesadillas if they will eat them at room temp.

Also there are those single serving salad dressing, pb, or salsa. You could pack them with carrot sticks, apple slices, corn chips.

Since your camp doesn't have a ban on nuts, you could try pesto, sun dried tomatoes, and mozzarella wraps.

One and half weeks into summer camp and my kids are already complaining that I'm packing them the same lunch too often. I admit I've been packing a lot of PB&Js ... Cheese and crackers and turkey sandwich are the other 2 meals I've packed. Any ideas? The catch is that the lunch has to be fully disposable (yes, I know it is terrible for the earth, but that's the camp rule), so no mac&cheese in a thermos, etc.
