OP here. It was this recipe from a recent edition of Cooking Light. They had a whole section on "microwave cooking" that issue.

I'd never tried preparing a whole dish in the microwave before but it got good reviews so I decided to try it. The only change I made was instead of cooking for 16 minutes after adding the rice, it was done after 12. I kept all other times the same.
The result was actually quite tasty, not gross at all. My "dinner-must-have-meat-in-it" husband actually asked for seconds! But I did not feel like I saved any time using the microwave and honestly don't really see the point, unless you live in a home without a stove. I'll make it again, but will do it on the stovetop.
