Virgin piña coladas are my favorite! Lava flows are yummy, too.. a mix of piña colada and strawberry daiquiri (or smoothie).

Most of the resort drinks aren't all that different tasting with and without booze. Pina coladas and daiquiris are sweet and tasty minus the rum. I'd say no to a virgin margarita. Tequila is important there.
In my own blender I do all sorts of fruit, ice, coconut water things that I'm sure any bar tender will be happy to mix up for you if asked.
