1 C cooked quinoa
1/2 C black beans
Cherry tomatoes
Green onions
Cilantro
Olive oil
Salt & pepper
Cumin
Fresh lime juice
Crushed red pepper

Black beans, chopped tomatoes, corn kernels, cilantro, scallions and lime juice mixed with quinoa.

Black bean hummus tartine topped with avocado and greens.

I eat black beans all the time. My go to recipe is:

Sauté minced garlic and Goya adobo in olive oil until it gets very hot but not burning. Sometimes I add some saffron too.
Empty one can of low sodium black beans and bring to a boil. Simmer for about 10 minutes. Mix one cup of brown rice in. Top with olive oil and more adobo if necessary.
Makes 2 servings.

Mmmmm.

I make "refried" black beans for tacos and burritos...

heat about 1-2 teaspoons canola oil in a pan, add teaspoon of whole cumin seeds. Cook them for a couple minutes then add 1 small chopped onion, 2-3 cloves chopped garlic. Saute, then add handfull of chopped cilantro. saute for a few minutes then add the cooked beans and salt to taste. mash or blend all together. Sometimes I also add 1/2 packet of taco seasoning. I also often add INdian spices (like carom seeds (ajmo) and asafoetida (hing) and turmeric, but they are not essential.

I use these beans in tacos, enchiladas, nachos, quesadillas. I also sometimes add a bag of baby spinach and blend it all together withe a hand mixer. This recipe can also be used for any other cooked beans - pinto, kidney, small red etc.

I mix BB with diced sweet potatoes, red peppers and green onions - and random leftover veggies around the house - corn, broccoli, carrots. I toss with lime juice and cumin and eat with a dollop of sour cream. We also eat it with chicken or as a taco filling.

Black Bean Dip

Mince 2-6 (or more!) cloves peeled galic in food processor. Add one cored tomato and chop. Add one can of beans (drain excess liquid but not all) and juice of one lime. Process until mixed but still chunky. Serve with tortilla chips. So easy and really tasty!

I make quick homemade "Chipotle":

Heat beans in saucepan adding chili powder, cumin, dried jalapeno, salt and pepper to taste

Pop an Uncle Ben's Spanish rice pack in the microwave

Create a "bowl" with rice, beans, and your choice of pico, salsa, cheese, sour cream, guacamole

Serve with chips

So good....takes 15 minutes tops to get on the table. We have it probably once a week.

Anyone have interesting vegetarian recipes using black beans that they'd care to post? I always do the same thing, or a variation thereof -- saute beans in a pan with cumin seeds and chipotle en adobo, add lots of lime juice, and serve with a grain (rice, polenta, bulgur). Sometimes I am with it enough to add avocada or salsa, sometimes not. It's tasty, cheap, and filling, but it's getting kind of boring. Any other suggestions? (Other than soup -- I do have a great black bean soup recipe but it's not really summer food, to me.)
