I would probably brush it with some dark molasses and put it back in to heat just enough for the molasses to melt a little, then let it rest so that the flavors have a chance to meld.

Pork chops actually taste really good with some tang, like w/Italian salad dressing.

Do you have some sort of vinegar based salad dressing you would use as a glaze on it?

Or since you used an adobo based rub, just serve it with some bbq sauce.

Can you wash the outside? At least get a little off?

Then I wonder - probably wont work - but what if you re browned it, or broiled it, with only sugar on it?

And if that fails, cut it up!

Can you cut it up and sauté it in a little broth? And then maybe throw it over some noodles?

The rain changed my plans for grilling a pork tenderloin outside today and I went for a quick rub that I could roast in the oven. All seemed to be going well until, when I went to slice the pork, I tasted the crust and it seemed awfully bitter to me. That's when I remembered that I forgot the brown sugar. Here are the ingredients:

2 tablespoons chili powder
1 tablespoon Adobo seasoning (I used Penzey's)
1 teaspoon ground cumin
1 teaspoon packed dark brown sugar
1/8 teaspoon ground cinnamon
2 tablespoons Extra Virgin Olive Oil

Fortunately, I already fed the kids and DH has a work dinner, so I am the only one who had to deal with this mess. Any idea what I might be able to do to recover it? I hate the idea of throwing away food, but it is pretty marginal.
