Skinny taste crock pot buffalo chicken lettuce wraps. Takes about 4 hours in the crock pot which is perfect because I have some errands to run after DH gets off work.

Making a pizza. Going to make it "stuffed crust" by cramming string cheese into the crust and rolling it up. You can stuff a whole crust with one string cheese if you cut it up vertically, which seems decadent but is really no biggie in the bad nutrition department.

A salad (if I'm feeling like it) or cut up celery and baby carrots (if I'm feeling lazy).

cut up chicken breast into strips or chunks and put in bottom of crockpot

add two cans of black or kidney beans, whatever your preference

2 cans of diced tomatoes w/ green chiles

1 envelope of low-sodium taco seasoning

anything else you may like: corn, jalapenos

cook on low for eight hours or high for four hours

scoop out and eat on whole wheat soft tacos

2 breasts serves our family of 3 for at least 2 meals. you could add more meat if you have a bigger family. you really cannot go wrong with this recipe.

doesn't chicken breast dry out in the crockpot? i'm assuming it is skineless and boneless.

i make chicken tacos on the stovetop in no time at all....

Just made min....beefy garlic sauce over pasta. Brown one lb of ground beef, add some diced onion, drain fat. Add two cans of diced tomatoes with roasted garlic, one can of white kidney beans, 10 oz of frozen spinach thawed, some salt and a dash of Worcestershire sauce, dash of brown sugar. Serve over rice or pasta.

Raw shrimp -- amount depending on size of your family
Garlic
1-2 cans of Diced tomatos w/ chilis, drained (or to control the heat a bit more, do regular diced tomatoes and add crushed red pepper, or one can spicy and one can regular)
crumbled feta cheese.

Saute garlic, add shrimp and saute 2-3min. Add tomatoes and crushed red pepper. Stir well and cook another 1-2min.
Sprinkle with feta cheese and bake in 350 degree oven for 10min.

Serve over couscous or the grain of your choice.
Match with a green salad or vegetable of your choice.

OMG this sound amazing...
